Incredibly deep and treacle like appearance. Fresh and vibrant. Incredibly rich and full. Long and lingering. A fantastic match with mousse but the wine wins!

Deep inky coffee and molasses hue held to rim. Nose is luscious with caramel and molasses and salty liquorice notes. Luscious mouthcoating molasses, coffee, chocolate and sweet chai tea and burnt caramel and lovely freshness for such an intensely sweet wine. The intensity and density of the wine almost over powers the sweet chocolate mousse, this outstanding wine doesn’t really need to be paired with a pudding but this is the perfect match for the luscious and exotic wine.

A rich, unctuous wine with plenty going on, spice, orange, toffee and tea with chamomile, it’s hard to unpack it all. Hugely sweet with an almost chocolate-like velvet richness yet somehow keeps it all in line with vibrant acidity. Very good length. Works very well with the mousse but with a wine like this, who needs food?

Dark chocolate, green rim. Bitter chocolate aromas, hints of teak. Intense, complex, flavour builds. Incredible intensity and length. With food: Perfect combination.

Dark and impenetrable colour with green tawny and green hue, cold tea with spice, incredibly long and concentrated with caramel and chocolate layers with fabulous length, dominates the dish with its intensity and concentration.

Dark brown with olive green rim. Very viscous looking in the glass. Intense, cola and tea, burnt toffee. Incredibly viscous on the palate. Incredibly rich together.

Dark amber with green tints. Concentrated chocolate and spice, slight cold tea, slight rancio, toasty age, has power. Rich, concentrated, massive power, rancio, slight cloying but has concentration and persistence. Food : boy, oh boy – another dimension to the wine!!!

Chocolate Mousse with Candied Orange Peel

Ingredients

Chocolate Mousse:

  • 100g Granulated Sugar
  • 3 tsp Salted Butter
  • 170g Chocolate 70%
  • ¼ tsp Flaky Sea Salt
  • 180mls Cream (heated)
  • 4 Large Eggs
Candied Orange Peel:
  • Sugar
  • Orange Peel
  • Water
 

Method

Chocolate Mousse:

  1. Make a caramel with a little water and the sugar.
  2. Whisk in the heated cream – making sure that all the caramel pieces have melted.
  3. Add the chocolate. Whisk well and allow to cool.
  4. Add the egg yolks.
  5. Beat the egg whites and add to the mixture.
  6. Top the set pears with the mousse and allow to set overnight (at least 8 hours) in the fridge
To Serve:
  1. Serve with candied Orange Peel, Cream or ice Cream
